Chicken Fajitas


Here's a simple recipe for chicken fajitas.


INGREDIENTS:
• 2 green bell peppers, sliced
• 1 red bell pepper, sliced
• 1 onion, thinly sliced
• 1 cup fresh sliced mushrooms
• 2 cups diced, cooked chicken meat
• 1 {.7 oz} pkg dry Italian-style salad dressing mix
• 10 {12"} flour tortillas

DIRECTIONS:
1. Cut peppers and onions into thin slices. Do not dice, leave slices long and thin.
2. Saute peppers and onion in a small amount of oil until tender. Add mushrooms and chicken. Continue to cook on low heat until heated through. Stir in dry salad dressing mix and blend thoroughly.
3. Warm tortillas and roll mixture inside. If desired top with shredded cheddar cheese, diced tomato and shredded lettuce.

This was really easy and Daddy P approved!!
I actually poached frozen chicken breasts in some frozen chicken broth that I had. I added carrots, onion and some chili powder to the broth. After the chicken breasts were cooked, I didn't dice them, I shredded the chicken. 
I thought it might be pretty bland with just the Italian dressing to season it all, but surprisingly, it was good. I have an idea the poaching of the meat with the added chili powder added to the flavor, but I'm not sure. I am going to make this again soon and I will let you know!
These were also good reheated! Enjoy!
