Recipe: Skillet Chicken Pot Pie [3.4.12]

Skillet Chicken Pot Pie

INGREDIENTS:
-1 Tbsp vegetable oil
-1 1/4 lb boneless skinless chicken breasts, cut into 1" pieces
-1 tsp salt
-1 1/2 tsp dried thyme leaves
-1/8 tsp pepper
-2 C sliced fresh carrots
-2 C frozen southern-style diced hash brown potatoes [from 32 oz bag]
-1 jar [12-15 oz] roasted chicken gravy
-1 C frozen sweet peas
-1 can refrigerated biscuits
-1/2 tsp garlic powder

DIRECTIONS:
1. In 12" nonstick skillet, heat oil over medium-high heat until hot. Add chicken; sprinkle with salt, 1/2 tsp of the thyme and the pepper. Cook 5 minutes or until chicken is browned, stirring frequently.
2. Move chicken to one side of skillet. Add carrots and potatoes; cook 5 minutes, stirring frequently. Add gravy to chicken and vegetables; mix well. Heat to boiling. Reduce heat to low; cover and simmer 20-25 min or until chicken is no longer pink in center and vegetables are tender, stirring occasionally and adding peas during the last 5 min of cooking time. 
3. During last 15 min of cooking, heat oven to 400°F. Separate dough into 10 biscuits. Cut each into quarters; place in large bowl. Add garlic powder and remaining teaspoon thyme; toss to coat. Place on ungreased cookie sheet.
4. Bake 8-10 min or until biscuit pieces are golden brown. Scatter over top of cooked chicken mixture before serving.

This recipe was easy and didn't require much prep work. I will try this recipe once more to see if I can tweak it to a better outcome as the taste was good but it was a bit dry with only 1 jar of gravy. Also, the carrots never got super tender so I will probably cook them a bit before adding them to the mixture next time. Also, the recipe called for 1 can of Grands Jr. biscuits, but I only had the normal sized ones, it worked fine just the same with the normal sized ones. I have never even had the Jr ones before, so not sure what the difference is. Also, I am not a huge chicken pot pie fan, but Daddy P did say he liked it; hence the 2nd try sometime in the near future. :)
