Recipe: Chocolate Chip Oatmeal Cookies [February/Week 4]

Alright, I'm back-posting.... and this isn't a dish recipe, it's a cookie recipe. I didn't specify on my resolution!! ;)

Chocolate Chip Oatmeal Cookies
Prep Time: 20 min
Cook Time: 13 min
Total Time: 33 min

INGREDIENTS:
-2 C butter
-2 Eggs
-1 tsp vanilla extract
-2 C brown sugar
-1 C confectioners' sugar
-3 C all-purpose flour
-1 tsp baking soda
-1/2 tsp salt
-1 tbsp ground cinnamon
-3 C rolled oats
-1 C semisweet chocolate chips

DIRECTIONS:
1. Preheat oven to 350°F. Grease cookie sheets.
2. In a large bowl, beat butter, eggs, and vanilla until well blended. Beat in the brown sugar and confectioners' sugar. Combine the flour, baking soda, salt and cinnamon, stir into the mixture. Finally, stir in the oats and chocolate chips. Roll the dough into walnut sized balls. Place the cookies 2" apart onto the cookie sheets.
3. Bake for 8-10 min in the preheated oven. Allow cookies to cool on baking sheet for 5 min before removing to a wire rack to cool completely.


The cinnamon adds a lot and the oatmeal makes it feel like you're eating something healthy-ish. :) I added more chocolate chips than what this calls for, actually, I think I ended up adding the entire bag because it just didn't seem like enough with the original called-for amount. Everyone that tasted these cookies liked them a lot, especially Daddy P who said they might be his new favorite cookie, but B wouldn't touch them. Go figure. Nonetheless, this recipe is a keeper.
