Recipe: Slow-Cooker Beef Stew

Ready in: 8 hours 30 min {approx.} {on low}
INGREDIENTS:
-1 medium onion, chopped
-2 C baby carrots
-2 C sliced celery
-1 lb. red potatoes, unpeeled, cubed
-2 lbs. beef stew meat, cut into bite-sized chunks
-2 tsp. italian seasoning
-1 {14.5oz} can diced tomatoes, undrained
-1/4 C water
-2 C beef broth
-1 {6oz} can tomato paste
DIRECTIONS:
1. Place onions evenly on bottom of large slow cooker. Top with layers of carrots, celery, potatoes & meat; sprinkle with italian seasoning. Pour diced tomatoes with their juice, water & beef broth over meat. Cover slow cooker with lid.
2. Cook on LOW 8-10 hours {or on HIGh 4-5 hours}, or until meat is tender.
3. Stir in tomato paste; cover. Cook an additional 10 minutes.

ReplyDeleteNice easy recipe! America's Test Kitchen had me microwave the onions with the tomato paste first. I love beef stew especially since the days are getting colder!
