Recipe: Swalty Cookies!


I just made that name up for these YUMMY cookies!
This is the first batch that I made about a month ago.
The maiden voyage into this mouthwatering recipe.
They don't look so great, but they were really good!!!!
My Parents and Daddy P and even Mister B loved them! 
He said they were all his! hahaha
They were a hit!!!

"Swalty Cookies"
this is the pic from the batch we made last night {B and myself} .. they looked a bit better than the last batch!

Ingredients:
  • 1 1/2 cups of all purpose flour
  • 1/2 tsp. of salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter at room temperature
  • 1/2 cup of tightly packed light brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 1 cup milk chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup broken up pretzel pieces
  • Pretzel salt or Sea salt
Directions:
  1. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
  2. In a larger bowl, beat the butter and sugars together on medium speed until light and fluffy (about 2-3 minutes). On low speed, slowly add the beaten egg and vanilla extract. Beat to combine, scrape down the sides of the bowl.
  3. Add the flour mixture and beat just until there are no more streaks of flour. Stir in the chocolate chips, peanut butter chips, and preztels. Cover and refrigerate for an hour.
  4. Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out well rounded tablespoonfuls of the dough and sprinkle with pretzel salt. Leave about 2 inches between each ball. Bake for 10 minutes. If you prefer crispier cookies increase the baking time by 1-2 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.
The batch we made last night sat in the fridge for longer than an hour. The dough was a little bit hard when first taken out, but it didn't seem to affect the cookies at all. It loosened up quickly. Also, for both times I've made these, I didn't use PB chips, I used butterscotch chips b/c that's what I had on hand. I don't think I would like them as much with PB chips, but that's just me! The measurements of the choc chips, butterscotch chips & pretzels were probably a little more than the recipe actually called for. There was some excess left at the end of it all because there didn't seem like there was enough dough to hold it all! Next time I make these, I will make at least a double batch because it doesn't make that many. It's supposed to make 24 cookies. I think that's about what we came out with last night, maybe a couple more. Waste not, want not. ;)

Daddy P said these were the best cookies he's ever had.... so... let me know what you all think!!!!
